Cowboy Cookies


If you will know anything about me, you will know that I am more of a baker than a cook. Hence the reason I am always put in charge of desserts at any occasion. When I asked my mom for any special requests for Sunday dessert she said, "Laura Bushs Cowboy Cookies"! And this is the recipe I found:

INGREDIENTS

  • 3 cups flour
  • 1 tbsp baking powder
  • 1 tbsp baking soda
  • 1 tsp cinnamon
  • 1 tsp salt
  • 3 sticks butter at room temperature
  • 1 1/2 cups white sugar
  • 1 1/2 cups packed light brown sugar
  • 3 eggs
  • 1 tbsp vanilla
  • 3 cups semisweet chocolate chips
  • 3 cups old-fashioned rolled oats
  • 2 cups sweetened flake coconut
  • 2 cups chopped pecans (8 ounces)

DIRECTIONS

    Preheat oven to 350°. Mix flour, baking powder, baking soda, cinnamon and salt in bowl.

    In 8-quart bowl, beat butter on medium speed until smooth and creamy, about 1 minute. Gradually beat in sugars and continue beating to combine, about 2 minutes. Add eggs, 1 at a time, beating after each. Beat in vanilla. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans.

For each cookie, drop 1/4 cup of dough onto ungreased cookie sheet, spacing 3 inches apart. Bake 17 to 20 minutes, until edges are lightly browned. Remove to rack to cool.


You read right! Three sticks of butter! YUM! This recipe makes a lot of dough for bigger cookies. It got difficult to mix everything in my kitchenaid mixer, so I recommend using a bigger bowl with a hand held mixer. They turned out delicious and I want to make sure I have this recipe on file the next time I make them.

Sad Face

In an attempt to make this blog more user friendly and less borrrring, I tried to download an awesome background with all the bells and whistles, which ended up not working. I will never understand blogger. It doesn't like me. During that process, I somehow deleted all the blog links to family and friends that I follow as well as other interesting blogs I like to check.

Sad face.  :(

I would love to chuck this computer at the wall.

Peculiar Purple Pieman

Last night, we played Scattergories with a group of friends. The letter was P and the category was cartoon characters. I wrote down, "Peculiar Purple Pie Man of Porcupine Peak". I got a lot of crazy looks for this one. I don't make these things up! I had to prove myself with this clip from the original Strawberry Shortcake cartoon.

We got a whopping 5 points for this one (Blake and I were on a team). 

I remember watching this cartoon when I was a little girl. It was recorded on a VHS along with Care bears and Rainbow Bright. So, I've only seen the same episodes repeatedly many times. You can't beat a classic!

Needless to say, we won that game of Scattergories.

Comfort Food Combo

What is comfort food? 
To me, it's a go-to meal that never fails. It's warm. It's easy to make. I eat it in my PJ's (that's comfort!).
I found a recipe that combines two of my favorite comfort foods.

This dish was a hit! I love spicy buffalo sauce! It's even great for left overs. Blake and I are all about left overs. It means less cooking! Next time I make it, I would try less mac and more chicken. Enjoy!

Year Two

We made it Two Years! Woo-Hoo!! 
Its such a blessing to be married to my best friend. We have made so many great memories and look forward to making many many more! I love that I can be my goofy self around Blake and he either gives me a "you are a nerd" look, or reciprocates the goofiness. We kept the celebrating low-key by having a picnic at Freestone Park in Gilbert. I Cooked up some pulled bbq pork and it turned out so delicious! It was such a nice day. Gotta love Arizona weather.

Its Friday Night, What am I not doing?

You guessed it, I am not at the George Strait concert despite my greatest efforts to be the 108th caller every morning before work. Instead, I'm waiting for Blake to finish work while catching up on my shows so we can go to Barro's for pizza. Don't worry, we'll just listen to George Strait in the car really loud so it feels like were there live. I'll catch you next time, George!
